The innkeeper has a very deep meaning in the crib, he is the incarnation of Evil and the Devil. The devil has always presented himself to men in disguise: his purpose is to attract them towards evil without their being aware of it and to manifest himself (eventually) only after the task has been accomplished. In the nativity scene, the Host lures people into the tavern and there, amidst the intoxication of wine and food, he clouds their conscience and prevents them from realizing that a little further away the Son of God is coming to light, giving life to the greatest mystery of all time.
